Mexican Salad with Watermelon Jalapeno Vinaigrette

Ingredients:

  • 1 container baby spinach
  • 1 can black beans, drained and rinsed
  • 1/2 cup pumpkin seeds
  • 2 cups watermelon, cubed (reserve 1 cup for dressing)
  • 1 container store bought mango salsa
  • 2-3 tablespoons of Zubi's Crema
  • 1 tablespoon honey or agave (vegan option)
  • 1 lime, juiced
  • 1/4 cup olive oil
  • 1/2 cup cilantro
  • 1 jalapeno
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Tajin seasoning

Directions:

  1. In a blender place the following ingredients - Zubi's Crema, honey, lime juice, olive oil, cilantro, reserved 1 cup of watermelon, jalapeno, vinegar and Tajin.
  2. Blend until smooth and set aside.
  3. Assemble the salad ingredients in a large bowl - spinach, beans, pumpkin seeds 1 cup of the watermelon.
  4. Add mango salsa to salad bowl and pour dressing over salad right before serving!
