Shiitake Mushroom & Artichoke Gyros

Ingredients
For Filling
- 2 tbsp Avocado Oil
- 1 medium Red Onion, diced
- 1 tbsp Garlic, crushed
- ¼ tsp Cumin
- ¼ tsp Ground Cinnamon
- ⅛ tsp Ground Cloves
- ¼ tsp Black Pepper
- ½ tbsp Oregano
- 2 tbsp Tomato Paste
- 14 oz Shiitake Mushrooms, stems removed and diced finely
- 1 and ⅓ cups Marinated Artichokes, drained and quartered
- ¼ tsp Liquid Smoke
- 2 tbsp Tamari
- 2 tbsp Maple Syrup
For Serving
- 6 Pita Bread, Toasted
- Mixed Greens
- Sliced Cucumber
- Sliced Radishes
- Sliced Cherry Tomatoes
- Zubi’s Creama
Instructions
- Preheat the oven to 400 degrees.
- Add the Avocado oil and sliced red onion to an ovenproof skillet and saute until the onions are softened.
- Then add the crushed garlic,cumin, cinnamon, ground cloves, black pepper and oregano and saute for a minute until the spices are well mixed with the onions.
- Add in the tomato paste and mix until well mixed.
- Add in the diced mushrooms and artichokes and fry until softened.
- Add liquid smoke, tamari, and maple syrup and fry until all the liquid has cooked off and the sauce is sticky.
- Then place your whole skillet into the oven and bake for 25 minutes.
- While the mushroom/artichokes are baking, prepare the sliced veggies and toasted pita bread.
- When the mixture is done cooking in the oven, allow it to rest for five minutes then start assembling gyros.
- Lay a pita bread flat and spread crema over the middle. Then add greens, cucumber, radish, and cherry tomatoes. Then add the mushroom/artichoke mixture on top of that and top with a drizzle of crema.
- Fold the edges of the pita bread and enjoy!
