Zubi Pasta Salad



1 box pasta, prepared (any type)

1 cup of @zubiatescocina  Crema de Jalapeno 

1 avocado, mashed

1 avocado, cubed

1 lemon

1 cup grape tomatoes, halved

1/2 cup vegan parmesan, grated or shredded

Salt and pepper, to taste

Red pepper flakes, optional




  1. Blend crema, mashed avocado, salt, pepper, 1/2 of the lemon (squeezed), & red pepper flakes (if using) together and then pour over cooled pasta.
  2. Squeeze the other half of the lemon over the avocado cubes and then add into pasta salad along with the tomatoes and cheese.
  3. Taste and adjust seasonings as necessary.
  4. Enjoy!
