ZUBI’S Enchiladas
For the SAUCE:
INGREDIENTS
- 6 T vegan earth balance
- 6 T gluten free bob’s red mill flour
- 4 T beaucoup creole texa grill seasoning (tag @ Beaucoup)
- 1 T paprika
- 1 T cumin
- 1 tsp chipotle chilli powder (too hot for kiddos so put just a dash)
- 1 24 oz tomato basil raso’s premium sauce
- 2 bone broth epic artisanal
DIRECTIONS
- In a medium pot, melt the vegan butter
- Stir in the flour until a thin paste forms.
- Stir in the chili powder (omit for kids!), cumin, beaucoup seasoning and paprika until combined. Cook for a couple minutes over medium heat until fragrant.
- Stir in the tomato paste followed by the broth. Whisk until smooth.
- Bring to a simmer over low-medium heat. Stir in garlic salt to taste and continue simmering until thickened for about 5 minutes, or longer if desired.
8 Plant Based Enchiladas
-4 cans black beans (TO USE WITH ALL ENCHILADA STUFFING)
-Drain and cook in skillet with ZUBI’S queso (TO USE WITH ALL ENCHILADA STUFFING)
-Add 1.5 - 2 8 oz jar ZUBI’S salsa (TO USE WITH ALL ENCHILADA STUFFING)
-Season with Garlic Salt or Adobo Seasoning (TO USE WITH ALL ENCHILADA STUFFING)
-Separately, Mix 1 container tree line cheese with 1 jar queso (TO USE WITH ALL ENCHILADA STUFFING) - PUT THIS IN A ZIPLOC BAG, TOO
-have sliced lettuce and tomatoes in a dish on the side
-Lots of chopped onions to add to the stuffing and to garnish all of these with
- add sliced avocado on top avocado, Tofutti Dairy Free Sour Cream / ZUBI’S Crema mix with garlic salt added to squeeze out in a ziploc bag
8 Non-Dairy Chicken Enchiladas
-Mix pieces of the rotisserie chicken in a bowl and use a hand held blender to mix it in with ZUBI’S salsa to shred it properly.
- Separately, Mix 1 container tree line cheese with 1 jar queso (TO USE WITH ALL ENCHILADA STUFFING)
-have sliced lettuce and tomatoes in a dish on the side
-Lots of chopped onions to add to the stuffing and to garnish all of these with

8 Regular cheese with Chicken Enchiladas

-Add in slices and shredded cheese
-have sliced lettuce and tomatoes in a dish on the side
-Add shredded cheese on the top
