Zubi's Quiche




  • 1 C Flour

  • 1 tsp Salt

  • 1/4 C Olive Oil

  • 1/4 C Cold Water 




  1. Mix flour and salt

  2. Beat oil and water to make thick mixture

  3. Pour into flour and mix with fork

  4. Press into 9" pie crust

  5. Fill w/ quiche mixture and bake at 400 degrees





  • 7 C shredded zucchini (this is before the water is squeezed out)

  • 8 eggs

  • 1/2 C whole wheat flour

  • 1/2 C Parmesan cheese

  • 1/4 C Sharp cheese

  • 1/4 C Manchego cheese

  • 1 C Zubiate's Mild salsa

  • 1 tsp salt



  1. Squeeze or press shredded zucchini a good squeeze to extract the water so it's dry. Transfer into a bowl and set aside. Preheat oven to 400 degrees F. 

  2. Drain Zubiate's salsa so you're left with the flavorful ingredients without as much liquid and add it to the bowl with the squeezed zucchini. 

  3. In a separate bowl, add eggs and whisk. Add flour and whisk well to combine (be patient with this process). Add all cheeses, salt and pepper, and whisk one more time. 

  4. To the bowl with zucchini, pour egg flour mixture on top and stir well to combine.

  5. Transfer mixture to crust and bake for 45 minutes or until toothpick inserted in the middle comes out clean. Broil for a few minutes for a golden crust.
