ZUBI'S Plant Based Elote in a Cup
Ingredients:
- 4 ears of corn
- 1 tsp fresh lime juice
- 3 tbsp vegan mayo of choice
- 2 tsp paprika
- 4 tbsp Crema de Jalapeno
- 2 tsp Arrowroot flour
- 4 tbsp Zubi's Queso de Jalapeno
Garnish on the side options:
- 1 tbsp Treeline cheese (herb garlic flavor)
- Garnish with lime and sliced ON jalapeño
Directions:
- Once corn is fully cooked, cut off the kernels from the cob.
- In a bowl, combine lime juice, vegan mayo, corn, paprika, Crema de Jalapeño, Queso, arrowroot flour and mix together.
- Garnish with chopped cilantro, jalapeños and Treeline Cheese
- Enjoy!
