Chipotle Manicotti Bake

Ingredients
- 14 count of Manicotti Shells
- 4 Green Onions, chopped
- ¼ cup Cilantro, chopped
- 2 large Eggs, lightly beaten
- 30 oz Part-skim Ricotta cheese
- 2 cups shredded Part-skim Mozzarella cheese
- 2 cups shredded Pepper Jack cheese
- 3 cups Zubi’s Salsa
Instructions
- Preheat the oven to 350 degrees. Cook manicotti shells according to the package to al dente. Drain. Set aside.
- In a large bowl, mix ricotta cheese, mozzarella cheese, green onions, eggs and cilantro. Spoon into manicotti.
- Spread 1 ½ cups of salsa into a greased 13x9 in. baking dish. Top with stuffed manicotti. Pour over the remainder of the salsa, making sure to spread evenly. Bake, uncover, for 20 minutes.
- Take out of the oven, sprinkle with pepper jack cheese. Afterwards, put it back in the oven, uncovered, for 10 more minutes or until the cheese is melted. Let stand for 10 minutes before serving. Enjoy!
