White Bean Soup

Ingredients

  • 1 small Purple onion, diced
  • 2 medium Shallots, chopped
  • 4 cloves Garlic, mashed
  • 2 Carrots, chopped into coins
  • 2 Celery stalks, diced
  • 3 cups fresh Spinach
  • 1 package of Northern Beans, cooked according to directions on package
  • 5 cups Vegetable broth
  • 1 jar of Zubi’s Crema
  • ¼ cup of Avocado oil
  • 3 Bay leaves
  • 2 tbsp Italian seasoning
  • 1 tsp Red pepper flakes
  • 1 tsp Cumin
  • ½ tsp Sea salt
  • ½ tsp Black pepper

Instructions

  1. Start by heating up oil, in a large pot, over medium-high heat.
  2. Saute onions, garlic, and shallots in oil for 4 minutes. 
  3. Then add in carrots and celery and saute for 10 more minutes, to ensure that the flavors have enough time to build.
  4. Add in beans, which will need to be made before you start making soup, crema, bay leaves, and all of the spices, followed by the vegetable broth. 
  5. Bring mixture to a boil, then reduce heat to low, cover and simmer for an additional 15 minutes.
  6. Remover cover and pull out then discard the bay leaves.
  7. Next, transfer 2 cups of the soup to a blender. Blend then add back to soup to make the mixture creamier.
  8. Add in spinach and stir until it has wilted.
  9. Serve garnished with crema and fresh cilantro. Enjoy!
