White Bean Soup

Ingredients
- 1 small Purple onion, diced
- 2 medium Shallots, chopped
- 4 cloves Garlic, mashed
- 2 Carrots, chopped into coins
- 2 Celery stalks, diced
- 3 cups fresh Spinach
- 1 package of Northern Beans, cooked according to directions on package
- 5 cups Vegetable broth
- 1 jar of Zubi’s Crema
- ¼ cup of Avocado oil
- 3 Bay leaves
- 2 tbsp Italian seasoning
- 1 tsp Red pepper flakes
- 1 tsp Cumin
- ½ tsp Sea salt
- ½ tsp Black pepper
Instructions
- Start by heating up oil, in a large pot, over medium-high heat.
- Saute onions, garlic, and shallots in oil for 4 minutes.
- Then add in carrots and celery and saute for 10 more minutes, to ensure that the flavors have enough time to build.
- Add in beans, which will need to be made before you start making soup, crema, bay leaves, and all of the spices, followed by the vegetable broth.
- Bring mixture to a boil, then reduce heat to low, cover and simmer for an additional 15 minutes.
- Remover cover and pull out then discard the bay leaves.
- Next, transfer 2 cups of the soup to a blender. Blend then add back to soup to make the mixture creamier.
- Add in spinach and stir until it has wilted.
- Serve garnished with crema and fresh cilantro. Enjoy!
