Jar Power Salad (Great for Meal Prep!)
Ingredients:

1/4 tsp cumin
1/4 tsp turmeric
1/4 tsp garlic powder
Salt to taste
1/4 C quinoa
1/2 C steamed purple sweet potato
Hodo Moroccan tofu cubes
1/2 C lentils
2 tbsp ZUBI’S Queso
Handful broccoli sprouts
Handful of tomatoes

Directions:

1. Cook the quinoa with 1/2 Cup water
2. Steam sweet potatoes or put in an air fryer
3. Cook lentils with 1 1/2 cups water and all spices
4. Pan fry the tofu until desired firmness is achieved for 5-8 min
5. Layer ingredients in a mason jar and top with ZUBI’S Queso, fresh sprouts and tomatoes.
